Chicken Curry Sausage
To cook sausage on the stove top, place a fry pan on the stove and turn on medium heat. Add a tablespoon of cooking oil and place sausage(s) in pan. Allow to simmer in the pan for 5 minutes. The oil should not be smoking, if it is, your pan is too hot and needs to be turned down. After 5 minutes, flip the sausage and let it continue cooking for another 10 minutes. Using a temperature probe, check the temperature of the sausage by inserting the probe in the middle of the sausage, ensuring the tip of the probe is about half way through the sausage. Sausage is done when it is 160F
To cook the sausage in the oven, pre-heat oven to 375. Place sausage in an oven safe pan lined with parchment paper. Cook for 12 minutes, then flip and cook for another 5 minutes. Check temperature of the sausage with a temperature probe. Sausage must be 160F.
Make a slaw mixture of the following ingredients:
1 tablespoon of Duke’s Mayo
2 tablespoon of finely chopped green onion
2 tablespoon of finely chopped celery
1 tablespoon of finely chopped dried cranberry.
Let the sausage rest for a minute or two, to cool down. Place on soft roll and top with slaw mixture.
