The unofficial sandwich of Argentina is the choripan. Chorizo on crispy bread with fresh chimichurri or tomato salsa. Chimichurri is a “salsa” made with fresh parsley, oregano, garlic, red pepper (or a fresh red jalapeno), olive oil, white wine vinegar, salt and black pepper. It is righteous! The fresh tomato “salsa” is fine dice tomato, onion, maybe some garlic, and white wine vinegar.
Mark spent a week in Argentina in February ’23 and ate his body weight in chorizo. The common style of chorizo was pork seasoned with garlic, a touch of paprika, black pepper and red wine. This is simple and delicious.
