Kitchen sink frittata are my favorite breakfast Casserole. We line the bottom of the pan with slices of potato and then layer with Old Major Chorizo, sautéed green peppers & onions, shredded cheddar cheese, and eggs. The frittata is baked and then topped with cheese. All you have to do is re-heat in the oven. Thaw overnight in fridge, bake at 350F until internal is 160F. Feeds 2 Hungry adults.
