We dry cure Indiana pork belly and we add in a heap of brown sugar and bourbon. When it’s time to smoke, we smoke with Indiana maple which imparts a mild maple smokeyness that takes this bacon to the next level.

Old Major Pecan-smoked bacon is dry cured and aged for 7 days (like all of our belly bacon). It is then smoked with pecan wood, which has a delightful smokey flavor. This bacon is not as bold as Hickory, even though the two trees are in the same family.
