Barbacoa is generally made with beef but we did a chicken version. This chicken is rubbed down with a tasty blend of dried chiles, garlic, onion and spices. slow roasted and then shredded. The Barbacoa comes with rice pilaf and salsa verde!
Cooking Instructions: Re-heat in microwave on high for 90 seconds covered. Rest for 2 minutes and repeat.
