Canada is a wonderful country to our north and we have a lot to thank them for like John Candy, and Maple Syrup. But we also have them to thank for Canadian Bacon. Without it, there would be no egg McMuffin. Canadian Bacon is a lean form of back bacon primarily made from the eye round portion of the loin. Our riff on Canadian bacon is dry brined for 12 days before being smoked on hickory and cherry. It is thick sliced and oh so delicious!
