Spicy Italian and Penne Rigate Pasta Cooking Instructions & Ingredients
Fill up a large pot of water with sufficient water to boil pasta. Add enough salt until the water tastes as salty as the sea. Bring the water to a boil. While the water is warming, in another pan add 2-4 tablespoons of olive oil, saute 2 cloves finely chopped garlic (or pressed with a garlic press) & one cup of diced red onion on medium heat. Cook until the onions are translucent and starting to brown. Add Italian Sausage and break it up as you are cooking it. Allow the sausage to fully cook and start to crisp up. Deglaze pan with a cup of dry red Italian wine and cook off alcohol. Add can of tomatoes to pan and decrease the heat to medium-low heat. Crush the tomatoes as they cook down. Allow the sauce to simmer for 30 minutes to an hour (the longer the better). Once the sauce has reduced and thickened, reduce heat to low or warm. If the sauce thickens adequately faster than 30 minutes, reduce to low and let it sit. Salt to Taste.
Plate pasta, top with sauce, shave or grate Bellavitano on top… generously. Enjoy!
