This sausage was inspired by mushroom risotto. Ground antibiotic & hormone free pork and blended with fresh local oyster mushrooms, parmesan, white wine, shallot, garlic and sea salt. Grill, bake, or pan fry!

Preparation Suggestions:
– Serve on a bun with fresh mozz and mushroom gravy
– Slice and brown the slices in a pan, serve on pizza
– Remove from casing, brown in pan and add to red sauce for pasta
