Rillettes are an old traditional way of cooking and preserving a variety of proteins. Pork is seasoned with a variety of savory spices, garlic, and sea salt and then it is slowly cooked for hours on end in rendered pork fat. The finished product is shredded separated from cooking liquid and then blended with rendered pork fat. The resulting mixture is sealed in fat so no air can get to the pork. Rillette can be stored for years on end and enjoyed later. But dont wait to enjoy ours!
To serve, set the jar out to come up to room temperature, spread on crispy toast, crostini or nice crackers w/ cornichons and grainy mustard.
