Portuguese Linguica


Portuguese Linguica is a traditional regional sausage made with pork, garlic, Portuguese dry red wine, and three types of paprika: Sweet, Smokey, Hot. It is distinguished by its mildly spicy flavor and a smoking process which makes the sausage flavorful and tender. Here at Old Major, we link the sausage and let it cure in the cooler overnight before smoking it with hickory. This is a delicious, flavorful sausage that can go with any number of dishes. For those of you that don’t like heat, this isn’t hot. Just tasty!

Cooking Instructions: The USDA suggests that you cook sausages to 160 degrees internal temperature to ensure food safety. We like to cook our pork sausages to an internal temperature of 145 degrees (and hold for three minutes) for a much more enjoyable sausage.
