Description
Based on a traditional Russian recipe, Red Bear Provisions in Chicago crafts this salami from choice cuts of Angus beef ground with pepper and garlic. Coarse chunks of pork fat are mixed in at the end, then the salami is smoked over a mix of maple, oak, and hickory before aging for a few weeks. It is rich, garlicky, deep, and delicious!
