Spanish Style Morcilla


Scratch made morcilla is a labor of love. We par-cook Spanish bomba rice and rest it with simmered tender onions. It is then mixed with pork blood, sea salt and spices, we aggressively hand mix before resting it overnight. It is then stuffed into hog casings and poached in hot water.  The sausage is ready for a pan with butter, manteca, or olive oil. Gently cook unitl it turns a deep purple color and starts to brown. Serve in a bun with apple slices and onion, Or make tacos, empanadas and more.
