The St. Galler Bratwurst is a white sausage that is usually made of both veal and pork. This recipe is very specific to St Gallen Switzerland. It is lightly seasoned and emulsified with skim milk. This is similar to a German Weisswurst but is still quite different. We did a ton of research on this one to try to nail it on the first try and gosh darnit, we think we did! The sausage is poached and then chilled before packing. Thaw it out, and grill or do what we do, and pan fry it in butter over low heat. This is a real treat!
