Jalapeño Cheddar Bratwurst & Cornbread Waffle Sandwiches

Savory-sweet cornbread waffles, gooey cheddar, spicy bratwurst, and a drizzle of hot honey.

This recipe turns your jalapeño cheddar brats into the centerpiece of a bold and unexpected waffle sandwich. It’s sweet, spicy, cheesy, crispy, and ridiculously craveable.

Ingredients (Serves 4 – Makes 4 sandwiches)

For the Waffles:

  • 1 box Jiffy cornbread mix (or your favorite cornbread batter)
  • 1 egg
  • ⅓ cup milk
  • ½ cup shredded cheddar cheese
  • 1 small jalapeño, minced (seeds removed for less heat)
  • Cooking spray or butter for waffle iron

For the Filling:

  • 1 lb jalapeño cheddar bratwurst, casings removed
  • 4 slices sharp cheddar cheese or pepper jack
  • 4 tbsp hot honey or regular honey + a dash of hot sauce
  • Optional: thinly sliced pickles or crispy fried onions

Instructions

1. Make the Waffles:

  • Preheat waffle iron.
  • In a bowl, combine cornbread mix, egg, milk, shredded cheese, and jalapeños.
  • Spray waffle iron and cook batter until golden and crisp. Set aside.

2. Cook the Bratwurst:

  • In a skillet over medium heat, cook the bratwurst meat until browned and cooked through, breaking it into crumbles or shaping into loose patty forms if preferred.

3. Assemble Sandwiches:

  • Lay one cornbread waffle down, top with:
    • A slice of cheddar
    • A heap of bratwurst
    • Drizzle of hot honey
    • (Optional) Pickles or crispy onions
  • Top with a second waffle to make a sandwich.

4. Finish (Optional):

  • If you want the cheese extra melty, pop the sandwich into a 350°F oven for 5 minutes or press it in a panini press.

Serving Ideas

  • Serve with a side of coleslaw, sweet potato fries, or a fried egg on top for brunch vibes.
  • Great with a cold beer or a spicy Bloody Mary.
