Spicy Garlic Sausage Skillet with Peppers & Rice
Servings: 4
Prep Time: 10 minutes
Cook Time: 25 minutes
Ingredients:
- 1 lb ground spicy garlic sausage (Remove from casing)
- 1 large onion, diced
- 2 bell peppers (any color), sliced
- 3 cloves garlic, minced
- 1 cup uncooked white or brown rice
- 2 cups chicken or vegetable broth
- 1 can (14 oz) diced tomatoes, with juices
- 1 tsp smoked paprika (optional)
- 1 tsp oregano
- Salt and pepper, to taste
- Fresh parsley (optional garnish)
Instructions:
- Cook the sausage
- Heat a large skillet over medium heat. Add the ground spicy garlic sausage and cook until browned, breaking it up with a wooden spoon (5-7 minutes). Remove from the skillet and set aside.
- Sauté the vegetables
- In the same skillet, add the diced onion and bell peppers. Sauté for 5 minutes, until softened. Add the garlic and cook for another minute until fragrant.
- Add rice and seasonings
- Stir in the rice, smoked paprika, and oregano. Cook for 1-2 minutes to toast the rice slightly.
- Simmer
- Add the chicken broth, diced tomatoes (with juice), and the cooked sausage. Bring to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed. Stir occasionally to prevent sticking.
- Season and serve
- Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley if desired.
