Cheesy Roasted Cabbage Gratin

Corned Beef, Cabbage and Potatoes is my “last meal,” Meal. In my mind there is nothing better than a well prepared corned beef brisket. I grew up having corned beef prepared in a crock pot and finished in the oven under a broiler with a mustard and brown sugar glaze. YUM. Cooking the potatoes and the cabbage in the crock pot after the beef is done is a game changer. I think i’m going to upgrade my cabbage though. Oven roasted corned beef and cheesy cabbage gratin is my new thing. Pan roasted cabbage finished with cream and sharp cheddar. Lets go!

Here’s how i Did it:

Ingredients:

  • One head of cabbage
  • 1LB Sharp Vermont or Wisconsin Cheddar
  • 1 Pint Heavy whipping cream
  • Olive Oil
  • Sea Salt
  • OPTIONAL: Onions, Thyme, Bacon

Recipe:

  1. Rinse cabbage and peel of any unappealing outer leaves.
  2. Cut Cabbage into quarters. Lightly salt the cut sides.
  3. Shred the Cheese
  4. Pre-heat the oven to 250F
  5. In a large stainless or ceramic coated oven safe pan, pour 3-4 tablespoons of olive oil and turn on medium high heat. Place the cabbage quarters in the pan cut side down. You want to cook the cabbage until it has very good caramelization ( dark brown )
  6. Once the first side is caramelized, flip the cabbage to the other sides and cook until caramelized.
  7. Add pint of cream and shake the pan to ensure the cream distributes.
  8. Sprinkle all of the shredded cheese in the pan with the cream and cabbage. Place the pan in the preheated oven.
  9. Allow the cabbage to cook until the cheese is melted and the mixture is starting to bubble.
  10. OPTIONAL: You can add caramelized onion, chopped cooked bacon, green onions, etc. to the pan with the cream and cheese to add some extra goodness!
