Entrepinares cheeses are among the best in the world and their El Atrio Manchego is no exception. Produced by El Atrio, in the La Mancha region of Spain, this firm Manchego cheese is made from the Manchega breed of sheep’s milk and aged for 12 months, giving the cheese a sharper flavor from the longer aging and a deep pepperiness. It grates well but is delicious eaten on its own, too.
