Spicy Garlic Sausage Skillet with Peppers & Rice

Servings: 4
Prep Time: 10 minutes
Cook Time: 25 minutes

Ingredients:

  • 1 lb ground spicy garlic sausage (Remove from casing)
  • 1 large onion, diced
  • 2 bell peppers (any color), sliced
  • 3 cloves garlic, minced
  • 1 cup uncooked white or brown rice
  • 2 cups chicken or vegetable broth
  • 1 can (14 oz) diced tomatoes, with juices
  • 1 tsp smoked paprika (optional)
  • 1 tsp oregano
  • Salt and pepper, to taste
  • Fresh parsley (optional garnish)

Instructions:

  1. Cook the sausage
    • Heat a large skillet over medium heat. Add the ground spicy garlic sausage and cook until browned, breaking it up with a wooden spoon (5-7 minutes). Remove from the skillet and set aside.
  2. Sauté the vegetables
    • In the same skillet, add the diced onion and bell peppers. Sauté for 5 minutes, until softened. Add the garlic and cook for another minute until fragrant.
  3. Add rice and seasonings
    • Stir in the rice, smoked paprika, and oregano. Cook for 1-2 minutes to toast the rice slightly.
  4. Simmer
    • Add the chicken broth, diced tomatoes (with juice), and the cooked sausage. Bring to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed. Stir occasionally to prevent sticking.
  5. Season and serve
    • Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley if desired.
